Nariño is located in the far south-west of Colombia, bordering Ecuador. There is an extremely high elevation and mainly super tiny farms in very remote areas. Alvaro Francisco Santacruz Rodríguez is one such producer. After living 40 years in North America, he returned to Colombia and started the farm, La Toma. The coffee is generally fully washed. The cherries are pulped, then the beans go straight into the fermentation tank where they stay 24 to 36 hours depending on the temperature, after what they are commonly sun dried.
